Olaf’s legs, body and nose are knitted flat and seamed. His arms are knitted as i-cords using DPNs. Please note that in this pattern, m1 (make one) is the lifted-bar increase which makes a stitch between two existing stitches, not the knit- front--and-back style increase, which increases into an existing stitch.
