There are two reasons for offering a basic V-neck sweater.
First, new knitters often just want an “easy” sweater to knit, which will also fit. A seamed sweater allows a knitter to get measurements and, if necessary, to start over if the gauge is off. Measurement problems with top-down and one-piece sweaters require starting all over, rather than, for instance, just re-working the back.
Second, sometimes a yarn is just so pretty that it needs no special treatment--just stockinette--to let the yarn show its beauty.
Any DK weight yarn works for this pattern.
