Australian/UK terminology is used throughout this pattern.

Crocheting to gauge is not important for this project, as long as you achieve a density to your fabric that you like.
(if your crochet style is usually loose, use a smaller hook; if your crochet style is usually tight, user a larger hook)
This may of course affect the final size of the project along with the yarn amounts required.
