The Dame sweater is worked from the bottom up in the round from a ribbed cast-on, then separated and worked flat from the armscye to the shoulder shaping, leaving the neck stitches on a holder or waste yarn. The saddle sleeves are worked similarly, with the saddle-strap stitches left on a stitch holder or waste yarn. The sweater is then assembled, and the live neck and saddle-strap stitches are joined and worked in the round into a polo collar.
