He can be made in any yarn and hook combination you want. Just be certain that the fabric is firm enough that stuffing does not show through.

My Stegosaurus is made in I Love This Yarn! Solids in three colors:

• Color 1: Hot Orchid (140 yards)
• Color 2: Purple (30yards)
• Color 3: White (5 yards)

Sullivan is an beginner-level pattern. Skills you will need include single crochet, increases, decreases, and some seaming.
